We looked at the “premium” ice cream market and saw a sea of the same predictable flavors, mass produced textures and forgotten craft . So we built something different.

The Taste: A high contrast battle between bitterness and mineral salt. The 85% Tanzanian cacao hits with a sharp, dry “snap,” followed immediately by the cooling, creamy weight of the charcoal mousse. The finish is long and dark, leaving a faint trace of woodsmoke on the palate.
The Feeling: It makes you feel grounded and powerful. It’s a “black tie” dessert serious, sophisticated and uncompromising. It feels like the quiet confidence of a dark, stone walled study.
The Taste: This is an olfactory experience first. The scent of hickory smoke hits before the spoon does. The taste is a sharp, acidic “shattering” of wild blackberry, cushioned by the earthy, rounded flavor of the smoked vanilla. The pecans provide a final, gritty, praline like texture.
The Feeling: It makes you feel mysterious and observant. It’s a “Midnight” dessert. It feels like a cold night in the Cape mountains, sitting near a dying fire while the air is crisp and the fruit is wild.
The Taste: Absolute yellow chocolate density. The mirror glaze has the texture of silk, giving way to the “Aero Mousse” which feels like it’s disappearing on your tongue. Then, the “wakeful” spike of salted caramel hits, pulling you out of the chocolate richness with a sophisticated, sweet edge.
The Feeling: It makes you feel indulgent and focused. This is the “Main Event.” It feels like the climax of a seated ritual where time slows down and the world takes a pause.
The Taste: A rhythmic transition of textures. It begins with the cold, clean sweetness of malted vanilla, which is suddenly interrupted by the salty, toasted “crunch” of the choux shards. As it melts, the burnt-sugar caramel bleeds through, adding a deep, amber warmth that lingers.
The Feeling: It makes you feel nostalgic yet elevated. It’s the “Architectural Comfort” entry. It feels like the sun hitting a concrete gallery floor warmth contained within a cold, modern structure.
Entry into the Ledger is managed via “Drops.” Once a batch is churned in our atelier, members are notified via the Vault. Access is first come, first served until the batch is archived.
When a flavor has reached the end of its seasonal rotation, it is moved to our Wall of Fame. These entries are no longer available for purchase, though they may be re-released during special “Vault Opening” events.
Unlike commercial ice cream which is pumped with air, our Aero Mousse is hand folded to achieve a specific weight and “velvet to liquid” melt rate. It is engineered to be a dense, structural dessert.
Yes. Our deep matte blacks are achieved using food-grade activated charcoal and high percentage Dutch processed cocoa. It provides a mineral rich depth without altering the base flavor profile.
Each Entry is unique. While some iterations (like Entry 003) utilize smoked pecans, others are nut free. Please refer to the “Technical Data” tab on each product page for a full list of components.
This is the “Tempering” phase. At freezer temperatures, the complex fats in our 70% cacao and botanical mousses are locked. Waiting 4 to 6 minutes allows the textures to soften into their intended sensory state.
Yes we do have a limited separate menu to order from.However it is provided upon request.
Yes we do deliver around Capetown for an extra fee and all orders are delivered on the weekend .
All orders are processed within 3 days and shipped on Saturday. From the menu you can order from Monday to Thursday.You will receive your order on Saturday.
